Southern to a “T”, boiled peanuts make a great, healthy snack. I like to make them in my pressure cooker and if you’re new to pressure cookers click on the related blog link for some pointers.
Believe it or not these are not HOT peanuts. For a hotter variety use 2 bottles (or more) of hot sauce and even some jalapenos.
Soak the peanuts for 2-3 hours in a bowl with enough water cover them. This will soften the shells and allow flavors to penetrate better when they are cooking. Drain the water.
Place all ingredients in your pressure cooker and fill with enough water to cover.
Cover your pressure cooker and set on high heat. After your “jiggler” starts jiggling, cut back the heat to medium-high and allow to cook for 1 ½ hours.
Leave the peanuts in the pot until fully cooled.
Drain them and enjoy immediately. Or they can be stored for several days – but they are best FRESH!
