A unique vegetable dip with much more depth of flavor than ranch or onion dip. I make this every Thanksgiving for pre- and post-dinner snacking.
Mix all ingredients and chill at least 3 hours, preferably overnight. Serve with raw vegetables for dipping.
I have used dried parsley (when I realized I forgot to buy fresh parsley). It works, but it is not as good. Also, I am not a fan of water chestnuts, but it is an important part of this recipe. I use my heavy duty garlic press to mince sliced waterchestnuts rather than chopping them.
This dip is also really good with salty potato chips.
