Made with flattened rice flakes. It is a tangy South Indian snack which is also great for breakfast or light lunch. Easy to make and comes together in no time.
Soak the poha in water for a couple of minutes and then drain it in a colander.
While draining the poha, heat the oil. Add peanuts and fry over medium heat for a minute. Add the mustard seeds, cumin seeds and green chilies. Fry until the mustard seeds start spluttering. Then add the onion and fry until they start turning golden brown. Add the green peas and fry for a couple of minutes. Add turmeric, mix well and then add the drained poha. Mix everything and fry for 4-5 minutes longer. Add a few tablespoons water if poha looks too dry. Add the salt, coriander and lemon juice, mix everything and cook for a couple of minutes longer. Remove from heat and serve hot.
Note: Poha is sold in all Indian groceries and most ethnic grocers carry it. You can also find brown rice poha in some health food stores. It is called ‘flattened rice.’ Use the thick variety for this dish.
