Great on poultry, pork and fish or just straight with tortilla chips.
1. Pit and dice the plums into 1/4 inch pieces.
2. Combine plums and other vegetables in medium bowl.
3. In a separate bowl, whisk together vinegar and salt.
4. Stir until salt is completely dissolved.
5. Pour liquid over the plum mixture and serve immediately.
You could also add diced green onions, diced tomatillos or fresh parsley, if desired.
This salsa can be refrigerated in an air tight container for up to 3 days.
