Description

Think of your classic potato skin but swap bacon out for marinara and pepperoni. Ideas are endless when it comes to pizza potato skins. Stuff them the way you love your pizza!

Ingredients

  • 1 whole Russet Potato
  • 2 Tablespoons Unsalted Butter
  • ½ teaspoons Garlic Salt
  • ½ cups Your Favorite Marinara Sauce
  • ½ cups Shredded Mozzarella Cheese
  • 6 slices Pepperoni, Sliced Into Quarters
  • 1 pinch Chili Flakes (optional)

Preparation

Preheat broiler.

Bake or microwave potato until fork tender. Let cool.

Slice potato in half lengthwise. Spoon out the potato, being careful to not go into the skin.

Add garlic salt to the melted butter and stir. Brush the interior and exterior of the potato skins with the salted butter. Place onto a baking sheet and place under the broiler. Keep an eye on the skins as you want them to get lightly crispy and a deep golden brown. Once that is achieved, remove from the broiler.

Place about 1/4 cup marinara sauce into each potato skin and use a spoon to smooth the sauce so it covers the inside. Add 1/4 cup mozzarella cheese into each potato skin, then divide pepperoni into each potato skin, tucking them into and onto the cheese.

Place back under the broiler and cook until cheese is fully melted, pepperoni is slightly crisp, and when those babies are looking awesome to your liking. This is the time to get excited!

Remove from the oven, sprinkle a bit of chili flakes on top if you desire, plate, and get ready to dig in.

Take one and give a nice bite. Crispy, buttery potato skin? Yes! A cheese pull with a perfect bite of pepperoni? Yes!
