These are my favorite appetizer. The are easy to make and everyone loves them. I never have enough. Make more than one batch!!
1. Cut the pepperoni into pieces. If you started with a stick cut it into 1/2″ slices first then cut the slices into quarters.
2. In a large bowl, combine the flour and milk.
3. Then add cheese, pepperoni and egg, mixing well.
4. Spray a mini-muffin pan with non-stick baking spray. Make sure to spray it well so that all surfaces are covered.
5. Place mixture into each cup, filling the cups about 3/4 full.
6. Bake at 375F for about 20 minutes.
Helpful hint: Place a piece of aluminum foil on the oven rack underneath the pan. The pizza cups will release grease and they tend to spill over. This will save you some clean up later!
