Description

No baking required! A delicious sub-tropical snack or appetizer. They’re so delicious!

Ingredients

  • 2 cups Macadamia Nuts
  • ½ cups Sweetened Coconut Flakes
  • 16 ounces, weight Canned Crushed Pineapples (reserve Juices)
  • 1 cup Cream Cheese, Softened
  • 1 Tablespoon Dark Brown Sugar
  • ¼ teaspoons Pure Vanilla Extract
  • ½ teaspoons Cinnamon
  • 2 dashes Nutmeg
  • 1 cup Cool Whip Topping

Preparation

Note: There is a 30 minute wait time involved with this recipe (included in prep time above).

In a large resealable bag add macadamia nuts. Seal bag and use a rolling pin to crush into small pieces. Add sweetened coconut flakes, seal bag and shake to mix together. Spread the mixture onto a plate and set aside.

In a mixing bowl add drained crushed pineapple and cream cheese and stir with a sturdy spatula to thoroughly incorporate. Add brown sugar, vanilla extract, cinnamon and nutmeg and stir again. Fold in Cool Whip topping. Cover with plastic wrap and refrigerate 30 minutes.

Place reserves pineapple juice in an airtight jar or container for another use and put into the refrigerator.

After the 30 minutes scoop (I use a teaspoon) some of the pineapple mixture into the palm of your hand and roll into bite size rounds (balls). Roll in the nut/coconut mixture to coat well. Place onto a platter. Repeat with remaining ingredients.

Cover platter with plastic wrap and refrigerate until ready to serve or store in an airtight container in the refrigerator until ready to serve.

These are great as an appetizer for a party or family gathering or just to snack on. My family loves them. Hope you enjoy!
