Who doesn’t like a well thought out cheese ball? This one will knock your socks off.
Place cream cheese, cheddar cheese and shoyu (or soy sauce) in a food processor and pulse to blend completely. With a spatula, remove all of the tasty goodness (it will be soft) to a bowl and cover. Refrigerate for 1 hour. Lick off spatula (optional).
Once cheese mixture is chilled, form into a ball and roll in the pepitas (on a plate) until cheese ball is covered. Serve with corn chips or thick tortilla chips or crackers.
Sign autographs after serving to happy fans.
