A colorful and flavorful side dish that can be on the table in under 20 minutes!
In a large skillet over medium-high heat, add minced garlic and corn. Sauté for 2–3 minutes until corn starts to brown slightly.
Add zucchini, salt, oregano, red pepper flakes, black pepper, and continue to sauté for 2 minutes more. Reduce heat to low and cover with a lid. Let cook for 5 minutes or until zucchini is softened.
Remove lid and stir in grated Parmesan. Garnish with cilantro and serve.
