Yeah, I know, it sounds weird. But this is one thing my brothers covet to the extent that they have to be shamed into sharing with their own children, and I struggle to keep up with demand through the holidays. Great for sporting events or any other aimless snacking.
Note: I use full-sized aluminum steam-table pans to make three or four batches at a time (also awesome for large quantities of Chex mix).
Place Parkay (see note below) in a 13×9 pan and slide into a cold oven. Set oven to 250°. When oven is hot and margarine is melted, remove pan to the counter and add parmesan. Combine Parkay and parmesan to create a loose paste. Dump in the Cheerios and mix with a wide spatula to coat.
Return to the oven for one hour, stirring carefully (man overboard!) every fifteen minutes.
Allow to cool completely; store covered (hellooo, Ziploc) at room temperature.
Note: I’m usually die-hard TEAM BUTTER, and I’ve tried other margarines (my daughter can’t tell the difference), but Parkay tastes the best to me.
