Small baby potatoes are tossed with fresh garlic, chopped parsley and flavored with salt and pepper for extra flavor.
1. Assemble all the ingredients.
2. Preheat the oven at 425 F.
3. In a bowl toss all the ingredients except the potatoes.
4. Whisk it up and the dressing is ready. Add potatoes to this bowl.
5. Mix until all the potatoes are coated in this dressing.
6. Transfer them onto a large rimmed baking tray and spread them out in a single layer.
7. Bake them in the preheated oven for 30-35 minutes or until toasty. Remove from oven.
8. Tilt the tray a little bit and the extra oil will separate in the corner of the tray. Drain it out.
9. Serve potatoes as an accompaniment to any salad or pasta dishes.
