Crispy, crunchy, low fat oven baked zucchini fries.
Preheat oven to 375 °. Cut Zucchini into Fry size pieces about 2 1/2 inches long.
Beat egg white with a splash of water.
Season Flour w/ Salt & Pepper to taste
Dust zucchini with flour.
Dip in beaten egg white.
Coat with Panko bread crumbs mixed with Parmesan cheese.
Place on cookie sheet, careful not to crowd, and bake for 10 minutes, flip and bake for another 10 minutes or until nice and crispy and lightly browned. Sprinkle with additional Parmesan cheese if desired.
Can be served with Ranch dressing, warm marinara sauce.

Amazing! I made these last night using a huge zuc and it gave me 3 whole trays full! I used Italian Panko and Garlic Parmesan cheese and they turned out great. My two guy roommates ate 2 trays to themselves, and they don’t like zuc!!

Thanks! Made these tonight. And while I would say *ugh* – they were FABULOUS! Kids loved them, I loved them, everyone loved them! Impossibly crunchy on the outside. Soft on the inside. Hard to believe there is no fat!

Delicious! We made this tonight without the parmesan and even without the cheese, it was really lovely. The crispy outside compliments the juicy zucchini inside – yum! This will be a recurring August treat!

I made these last night and now I can’t stop thinking about them! I baked them on a cooling rack so I wouldn’t have to flip them and just used regular bread crumbs. They were so crispy and delicious. Perfect healthy substitution for fried food cravings. Thanks so much for this recipe!
