A few simple tricks make ordinary supermarket olives taste like the ones you would get in the Mediterranean region!
Mix together garlic, honey, pepper and vinegar till the honey has dissolved. Stir in the herbs de Provence and olive oil, followed by olives. Leave to marinate for at least 2 hours.
For green olives, use the same ingredients and process, but use only 1/4 tablespoon of honey.
