Easy vegan and gluten-free snack filled with nuts, coconut, dates and lime flavor.
1. Place all of the nuts and coconut in a food processor, put the lid on and process until they are coarsely chopped.
2. Add dates into the nut and coconut mix and chop again. A sticky dough should start to form.
3. Add lime juice into the mixture and blend one last time.
4. Scoop out a small bit of dough and shape it into a small ball. Place on a sheet of parchment.
5. Repeat until you have formed all of the dough into balls.
6. Makes 12 larger balls or 20 smaller bites.
7. Enjoy immediately or store them in the refrigerator.
