Description

Artichoke/Spinach Dip is something I order at every restaurant I go to. I have been on a quest for the best and I finally found my favorite. Lucky for me, I knew the waitress … and now I have a fabulous recipe! I especially love this because there is no mayo. I still have my childhood fears of mayonnaise … makes me wanna hurl. So, cream cheese? Oh, yes. Pepper Jack Cheese?? Oh, my.

Ingredients

  • 2 Tablespoons Butter
  • 3 Tablespoons Diced Yellow Onion
  • 2 teaspoons Chopped Garlic (or Minced, If You're Feeling Lazy)
  • 4-½ teaspoons Flour
  • 1-½ cup Heavy Cream
  • 1 cup Half-and-half
  • 2 cubes Chicken Bouillon
  • 4 ounces, weight Cream Cheese
  • 2 Tablespoons Grated Parmesan
  • 1 cup Shredded Pepper Jack Cheese
  • ⅛ teaspoons Ground Cayenne Pepper
  • ⅛ teaspoons Ground White Pepper
  • ½ teaspoons Salt
  • 10 ounces, weight Frozen Chopped Spinach
  • 6 ounces, weight Can Of Artichoke Hearts, Chopped

Preparation

In saucepan, heat butter, onions, and garlic over medium heat until onions are soft. Add the flour and mix well. Cook for an additional 3 minutes. Add the heavy cream, half-and-half, and chicken base. Mix well and heat until almost boiling. Reduce heat to simmer and add cream cheese, Parmesan, and pepper jack. Blend well while adding cayenne pepper, white pepper, and salt.

Squeeze out the liquid from the spinach in the sink and then add it to the mixture. Add the artichoke hearts, blend well. Optional: when ready to serve, sprinkle with Parmesan and bake for 3-5 minutes or until brown on top. Top with fresh diced tomatoes.

Oh thank you for this recipe! I’ve been looking for a spinach/artichoke dip without mayo (I too am afraid. VERY afraid.) for a while now! And pepper jack cheese just happens to be my favorite so… I think recipe and I shall be very happy together!

Can’t wait to try it!
