So quick and easy to make, so delicious. It’s slightly aromatic due to white wine and thyme. You can serve it with crackers, tortillas, bruschetta … I’m sure you’ll find a way to use this one.
1. Heat some olive oil, add finely chopped onion and stew for a few minutes. Add garlic and chopped mushrooms, wine, salt, pepper and stew until mushrooms soften and all the liquid evaporates (if necessary, add some water).
2. When all the water has evaporated, transfer mushrooms to a blender, add butter, parsley, thyme and freshly squeezed lemon juice and blend everything together until you get a pate. Put in the fridge to cool.
