When I was in elementary school, I would go to my friend’s house after school, because she lived by my mom’s work. I was always excited, because if we weren’t getting ice cream from Thrifty’s (now Rite Aid), her mom would make this amazing concoction!
Pour enough oil in a pan or skillet, so that when frying the tortillas, they are completely covered. If they are not, that is ok, because you will flip them in the process anyhow.
Heat oil on medium heat.
Mix together your cinnamon and sugar. This needs to be in a pie pan or baking dish, so that you can cover one entire tortilla.
These are meant to be super sugary and packed with cinnamon, so if you feel the need to add more, do it!
My friend’s mom always fried the entire tortilla, but you may cut them into fourths, so that they are easier to handle.
Once the oil is nice and hot, fry your tortillas one at a time. Flip, so that both sides are lightly browned. They’ll get a little puffy and that is just fine. Without draining, toss your tortilla into the sugar/ cinnamon mixture. I mean really douse it with the stuff! It is meant to be everywhere!
Now, enjoy the fruits of your labor! These are god hot, warm, and at room temperature.

This are called” Bunuelos”. I looked it up on the internet to be sure. They are really good.

Actually a sopapilla is fried dough, not tortilla. It’s a totally different thing, but just as delicious. They puff up in the hot oil and are hollow inside.
You can serve them plain or cinnamon sugared, with or without butter & honey. Down here in Texas, we sometimes even stuff them with meat, beans, cheese, etc.
The fried, sugared tortilla sounds good, but we don’t see them much around here.

These sound like sopapilla and we make them even better (ha-ha) by doing everything you have done, but then drizzling them with butter and honey. My kids love them!
