When I was in Duluth for the Bay Front Blues Festival many years ago, I met some people in a bar who just returned from salmon fishing in Alaska. One of them was sampling something similar to this. I concocted my own version, and it’s pretty tasty!
Mix together all the ingredients (except salmon) thoroughly. Flake the can of salmon with a fork and add to the cheese mixture. Let set for 3-4 hours in the fridge. Serve with assorted crackers.
Note: you may want to add a bit more mayonnaise to get the consistency you desire. Sometimes, I serve it in a bowl; othertimes, I serve it in a ball. If you want to serve it in a ball, use 1/2 cup of mayonnaise; if in a bowl, use 3/4 cup mayonnaise.

Yummy! A friend of mine made this today for a luncheon we had. She didn’t have any of the cheddar cheese, so used mozzarella instead. It was SO yummy and addictive! She served it with Ritz crackers.
