Game day food that includes pastry. Yes, please!

Ingredients

  • FOR THE PIMENTO CHEESE:
  • 1 pound Freshly Grated Sharp Cheddar Cheese
  • 4 ounces, weight Chopped Pimentos From A Jar, Drained
  • 1 teaspoon Worcestershire Sauce
  • 1 whole Small Jalapeno, Minced (remove Seeds If You Want Less Heat)
  • 1 teaspoon Hot Sauce Such As Texas Pete
  • ¼ cups Mayonnaise
  • ¼ cups Sour Cream
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • ½ teaspoons Seasoned Salt, Plus More If Needed
  • FOR THE PINWHEELS:
  • 1 piece Frozen Puff Pastry, Thawed
  • 1 cup Prepared Pimento Cheese, Recipe Above
  • Hot Sauce, Optional
  • Cooking Spray (optional)
  • Coarse Salt, Optional

Preparation

For the pimento cheese, combine all ingredients in a large bowl and adjust seasonings to your preference. If the cheese mixture seems very dry, add a bit more sour cream and mayo 1 tablespoon at a time.

For the pinwheels, preheat the oven to 450 F. Line a baking sheet with parchment paper or a silicone liner.

Unfold the puff pastry and use your fingers to stretch it in all directions just a bit. Spread the pimento cheese all over the puff pastry. If using, sprinkle hot sauce over top. Use your fingers to roll the pimento cheese-covered puff pastry into a tight log, then cut into 1-inch rounds. Arrange the rounds cut side up on the baking sheet with 2 inches space in between. If using, spray with cooking spray and sprinkle with coarse salt. Bake for 15-20 minutes until puffy and golden. Remove from oven. Let them cool 5 minutes or so before serving. Enjoy!
