I have always love the Bacon-Wrapped Jalapeno Thingies from The Pioneer Woman. As I was making some today, I noticed that I had an extra lime around so I decided to add the zest and juice to the cream cheese and wow, what a good combo. I still love the original, but the lime adds a simple twist.
Cut jalapenos in half lengthwise and remove the seeds and white membrane with a spoon. Zest the whole lime then cut in half and juice. Mix together softened cream cheese, lime zest and lime juice. Spread cream cheese mixture into each jalapeno. Wrap jalapeno with bacon pieces and secure with a toothpick if needed.
Bake on a pan with a rack in a 375-degree oven for 20-25 minutes.
