Fresh tasting, simple to make salsa using canned tomatoes.
Cut onion and jalapeno into large chunks and cut the garlic clove in half. Place in food processor and pulse a couple times, until roughly chopped. Add tomatoes (including liquid), cilantro, lime juice, salt, and cumin. Pulse a few times until mixture is combined but still somewhat chunky. Do not overmix/liquefy.
Refrigerate at least one hour before serving (the longer, the better!)
Serve with tortilla chips.
Note: for additional heat, you can leave some of the seeds/membrane intact in the jalapeno.

This is almost identical to mine that I nearly obsess over. I’m glad somebody else enjoys this combo too. Yum!
