Simple to make and so many different cheese/herb combinations. I am sure you’ll find them a favorite.
These make great friend or teacher gifts! Just add some cheese and fruit to a basket and you are set.
Stir together in a mixing bowl: soft Butter, grated cheese, herbs, and pepper. Mix until blended. Then add in flour and salt. I mixed it all together in my mixer, to make sure it was blended together, until it formed a stiff dough.
Take out of your bowl and form into a 2 inch round log. Wrap tightly in plastic wrap then let chill in freezer for 30 minutes.
Preheat oven to 350 degrees F.
Take chilled dough out and cut into thin slices. If edges of cracker slice start to crumble, just press back together. They will bake up just fine. Place onto a lightly greased cookie sheet.
Bake for 11 minutes, turn crackers over and continue to bake for another 11 minutes. Let crackers cool on a foil lined counter.
* You can use any flavor of cheese or herb. My favorites are: pepper jack /cilantro with Parmesan/thyme
