A delicious way to use up leftover fresh herbs! Also a quick and easy snack!
1. In a small bowl, add all of the herb goat cheese ingredients and mix together. Set aside.
Preheat the oven to 375 F. Cut the bread into slices (mine were about 3/4 to 1 inch thick) and drizzle with olive oil. Place the slices onto a large baking sheet and place in the oven for about 10 – 15 minutes, flipping once. After bread is toasted, rub one side with the raw clove of garlic.
2. Increase the oven temperature to 400 F. Wash the peppers, remove the stem and any seeds and cut them into thin slices. On a large rimmed baking sheet, lined with parchment paper, add the pepper slices, olive oil, balsamic vinegar, and salt. Toss to coat, spread them in a single layer and place pan into the oven. Roast for about 30 minutes, or until peppers are soft and caramelized.
3. Spread about 1 tablespoon of herb goat cheese spread onto each slice of bread and top with balsamic roasted peppers.

I made this over the weekend. We had it with a nice crisp Pinot Grigio and I cannot begin to tell you how delicious this is. The balsamic added a nice sweet tang and the little peppers were so good. Easy to make and scrumptious. Thank you for the recipe.
