Guacamole Zucchini Dip is a super delicious, quick and easy to prepare Mexican snack. It is very healthy and low in calorie.
Slice zucchini very finely. Don’t peel the zucchini. We want to keep the dark green spots for our green super bowl.
Under running cold water, wash chili peppers. Halve lengthwise and remove the core. Slice chili peppers into thin strips. Peel garlic and cut in half.
Halve avocados lengthwise and remove the pits. With a spoon, scrape the fruit pulp out. Cut avocado pulp into chunks.
Squeeze the juice of limes. Place avocado flesh and garlic into a blender. Add lime juice and olive oil. Season with salt and pepper. Puree until smooth and creamy.
Mince the cilantro. Add zucchini, chili and cilantro and fold into dip.
