Guacamole with charred corn and spices topped with feta cheese.
Add corn and olive oil into a skillet, place over a medium to high heat and cook for about 5 minutes. Stir occasionally—the goal here is to char the corn and blacken it a little bit. Remove from heat and set aside.
Peel and pit the avocados and mash them in a bowl with a fork. Add onion, lime juice, garlic salt, black pepper and red pepper. Mix well and add the charred corn.
Put it into a serving bowl (I reserved some corn for sprinkling on top of the finished guac) and sprinkle feta over it. Serve with chips and enjoy.
