A wonderful recipe for this classic favorite!
Carefully remove the flesh from the avocados and place on a plate. Coarsely chop it up with a fork. It should be creamy with some chunks still in it.
Add the tomatoes, cilantro, onion and jalapeño pepper.
Sprinkle the kosher salt evenly over the top of the pile and add the lime juice.
Gently stir everything together without mashing. Adjust the flavors, salt, lime according to taste.
Or, double the recipe with 3 avocados!
Makes about 3 or 4 servings.
