Guacamole with the addition of edamame. Buttery smooth with a little jalapeno heat and a lime lift.
In the bowl of a food processor place the edamame and process until nearly smooth. Peel and dice the avocado and place in a mixing bowl. Add the minced onion, jalapeno, tomato and mash with the tines of a fork until you acheive a fairly smooth paste; you do want a few lumps here and there of avocado. Fold in the edamame. Add the lime juice and then season to taste with salt.
Cook’s note: If you don’t want too much spice then only use half a jalapeno and make certain to remove the seeds and ribs. Wear gloves if you are not used to handling chilies. If you’re not a fan of lime, then only use 1 lime.
