Description

A twist on the classic shrimp cocktail, these grilled BBQ shrimp will be the hit of your next party. The sweet, mango barbecue sauce is perfect with the slight spiciness of the grilled shrimp.

Ingredients

  • 1 pound Medium To Large Shrimp, Peeled And Deveined
  • 3 Tablespoons McCormick Grill Mates Sweet And Smokey Rub
  • 2 Tablespoons Olive Oil
  • ¼ cups Onion, finely chopped
  • 2 cloves Garlic, Minced
  • 1 Tablespoon Fresh Ginger, Grated
  • ½ cups Mango Puree
  • ½ teaspoons Cumin
  • ¼ cups Apple Cider Vinegar
  • 2 Tablespoons Worcestershire Sauce
  • 1 Tablespoon Garlic Powder
  • 1-½ cup Ketchup
  • ¼ teaspoons Cayenne Pepper
  • ¼ teaspoons Salt
  • ¼ teaspoons Fresh Ground Pepper, Or More To Taste

Preparation

Put the shrimp into a glass dish. Dust the shrimp with the dry rub and let them marinate at room temperature for 10 minutes.

While the shrimp are marinating, make the mango BBQ sauce. Add the olive oil into a large saucepan over medium heat. Add the onion and saute for 5 minutes on medium heat. Add in the garlic and ginger, cook for 2 minutes more. Add in the rest of the ingredients (mango puree through pepper) and let the mixture simmer, stirring frequently for 20 minutes.

While the sauce is simmering, heat a well-oiled grill pan (or the grill) over medium-high heat. Once the grill is hot add the shrimp in a single layer and grill for 3-4 minutes per side. Remove to a plate and serve with the mango BBQ sauce on the side.
