Description

This healthy, easy and tasty appetizer has all of the flavors of a Greek salad in one bite!

Ingredients

  • 2 whole Cucumbers
  • 6 ounces, weight Crumbled Feta
  • ¼ cups Plain Greek Yogurt
  • ¼ cups Chopped Sun Dried Tomatoes
  • 15 whole Pitted Kalamata Olives, Chopped
  • 1 Tablespoon Dill Chopped
  • 2 teaspoons Lemon Juice
  • ¼ teaspoons Pepper

Preparation

Slice cucumbers into about 1/4″ slices, varying thickness depending on your preference.

Mix together feta, yogurt, sundried tomatoes, olives, dill, lemon juice and pepper. Mash up feta with the back of spoon or fork, if needed.

Place approximately 1 heaping teaspoon of feta mixture on each cucumber slice. Enjoy!

Very tasty! My only suggestion is to let the cukes sit for awhile after slicing, because they release a lot of water and the tray gets a layer of liquid on it. I’ve seen some suggestions of salting the sliced cukes to draw out the water more quickly, then wiping the salt off. Otherwise, this is a great recipe and I’ll be sure to make this again.
