Hearty granola bars studded with dried fruit, coconut, nuts and dark chocolate.
1. Preheat oven to 350ºF.
2. Line a deep sheet pan with parchment paper and add oatmeal, nuts and coconut to pan; toast for 10 minutes. Set aside parchment and pan for later.
3. Reduce oven temperature to 300ºF.
4. Add toasted ingredients to a large bowl, stir in graham crackers, honey and vanilla. Mix well to combine.
5. Add dried fruit and chocolate and mix to combine again.
6. Press mixture into the pan lined with parchment, make sure the mixture is densely packed into the pan.
7. Bake for 30 minutes, let cool for 3 hours before slicing.
