My Kentucky-born and raised grandma made these for me all the time when I was little (her cooking was the beginning of this NJ-born and raised girl’s obsession with Southern-style cooking!) They are super easy to make!
Heat vegetable oil in an iron skillet or other deep pan.
Slice the yellow squash into thin rounds.
Wisk water into flour until it becomes slightly thicker than pancake-batter consistency. (Amount will depend on how many squash rounds you have to fry.)
Coat yellow squash in batter and fry in hot oil until lightly browned on both sides. Drain on paper towels and season generously with salt.
Serve immediately.
