Description

Great appetizer or snack for the bleu cheese lovers. It’s great for picnics, family reunions, etc.

Ingredients

  • 1 block (8 Oz. Size) Cream Cheese, Softened
  • 1 container (8 Oz. Size) Gorgonzola (or Mild Bleu Cheese Crumbles, Room Temperature)
  • ⅔ cups Dried Apricots, Finely Chopped
  • ¼ teaspoons Black Pepper
  • 1-½ cup Walnut Pieces

Preparation

In a bowl add softened cream cheese and Gorgonzola cheese. Mix with a rubber spatula. Add apricot pieces and black pepper; mix well until smooth.

On a plate add walnut pieces. Using your clean hands and a teaspoon scoop cheese mixture into rounds and place on top of walnut pieces, rolling the ball to coat all sides. Place balls on a platter and repeat until all cheese mixture/walnuts are used. (I usually wet my hands to roll the rounds out).

Cover the platter tightly with plastic wrap and refrigerate for one hour before serving. I like to serve these with a variety of crackers. Enjoy!

Thank you for posting! All at my family gathering enjoyed these tasty snacks! A couple of things I did differently: I used Light cream cheese and it still set well in fridge. I used Blue Cheese instead of Gorgonzola. I thought I had all the dried apricots I needed, but alas, I didn’t, so I chopped up what I had and made up the rest of the 2/3 cup with chopped pitted dates, but you could use any chopped up dried fruit and it would probably still be good, so don’t pass this up just because you don’t have apricots! I toasted my walnuts also. I rolled about a dozen 1.5″ balls for my party, so more than the teaspoon called for, and still had about 1-2 cups of mixture left that we will just use on crackers for snacks. Overall, a very good quick and easy recipe!
