A crispy phyllo appetizer with Gorgonzola, bacon and tomatoes.
Preheat oven to 350.
Cook bacon until crisp.
Drain on a paper towel, then chop or crumble.
Dice tomatoes.
Mix bacon, tomatoes and Gorgonzola cheese together in a bowl.
Spoon into Phyllo cups until just mounded.
Place on a baking sheet.
Cook for 20 minutes until slightly browned on top/edges.
Serve hot/warm – will be very hot to “pop in your mouth” so let it cool slightly.
