Gorditas are fried sin. The best part is that you can stuff them with just about anything.
In a large bowl, add the masa harina, baking powder and salt; mix. Add the warm water and mix with your hands until a smooth dough is formed (a good way to tell is that it doesn’t stick to your fingers that much).
Heat the skillet on medium-high heat; add the oil.
To form the disk, grab dough about the size of a lemon, form a ball and the flatten it with your palms, turning as you go to form the disk. Fry until golden brown (they start to float when almost done). Drain on a paper towel, slice in the middle and stuff with meat or beans.
Note: in the photo, mine are stuffed with refried beans and carnitas.

I just made my recipe for pork carnitas last night, and was planning to make tacos with the leftovers. Your gorditas sound like a MUCH better option. Thanks for the recipe, and for perfect timing on sharing it!
