Warm, sweet, salty, creamy and crunchy. Come on people, you need to make this.
Cook the onions with the olive oil in a skillet over low heat for about 20 minutes. Turn off the heat and add the balsamic vinegar and some salt and pepper. Meanwhile, preheat the broiler in your oven. Slice the baguette and drizzle each slice with olive oil. Broil the bread until golden. Top each slice with a scoop of goat cheese and season with salt and pepper. Broil again for about 60 seconds, just until cheese is heated through. Top with a generous mound of the onion jam and pour a generous glass of red wine.

I made these the other night and they were amazing! And super simple. I added some fresh thyme towards the end of cooking the onions just to give it a little zing. The thyme added a fresh savory note to the sweetness of the onion and the zip of the balsamic.
