A fresh garlicky hummus! Perfect for a afternoon snack on the porch.
In a food processor, pulse garlic scapes, lemon juice and salt. Add chickpeas, tahini (optional) and blend until smooth, adding olive oil slowly as you go.
Top with herbs and spices such as dill and sumac or maybe some smoked paprika.
Note: You can reserve some of the chickpea liquid for thinning the mixture if needed.
