Description

A light and healthy, frozen snack made with vanilla Greek yogurt and fresh blueberries.

Ingredients

  • 1 pint Blueberries
  • 6 ounces, weight Container Of Vanilla Greek Yogurt Or Blueberry Flavor

Preparation

You’ll also need a toothpick for this recipe. Line a baking sheet or plate with parchment paper, set aside.

Poke the toothpick in the center of a blueberry and swirl it in the yogurt until covered. Place the yogurt covered blueberry on the prepared baking sheet. Do the same with remaining blueberries.

Place the baking sheet of blueberries in the freezer and freeze for one hour. Place the blueberries in a freezer safe container until serving.

Well, this was simple, but AWESOME! My boyfriend was crushed when Yoplait switched from aspartame to sucralose in their light strawberry shortcake yogurt (says it’s unpalatable now). He’s been trying alternatives and not been pleased. So we had some extra strawberry shortcake and a Stoneyfield French vanilla in the fridge that was going to go to waste. I eat plain Greek yogurt, since it has way more nutritional bang for the calorie buck. However, I decided I could have a sweet treat in the evening, particularly since 1/2 c. blueberries would only have ~1/3 of a 6 oz. container of sweetened yogurt (~70 calories total). So I ran out and got a pint of blueberries and coated them with the French vanilla (140 calories for the whole 6 oz.!). I tried a couple and while the yogurt isn’t fabulous, it was still a tasty treat. I’m looking forward to yogurt covered blueberries for my evening sweet. And once I use up his yogurts, I’ll switch to Greek to get a protein boost. Thanks for sharing!
