Description

Delicious homemade jalapeno poppers made with cream cheese and Mexican cheeses fried to perfection.

Ingredients

  • 12 whole Jalapenos
  • 8 ounces, weight Cream Cheese
  • 1 cup Mexican Blend Cheese
  • 1 teaspoon Cajun Spice Blend
  • 1 cup Whole Milk
  • 2 cups Flour
  • 2 cups Plain Bread Crumbs
  • 2 cups Vegetable Oil

Preparation

1. WEAR GLOVES. Prepare jalapenos while wearing gloves. Cut them in half lengthwise, and remove seeds and the white ribs inside the peppers. DO NOT AT ANY TIME TOUCH YOURSELF WITH YOUR GLOVED HANDS. The heat from the peppers will also clear your sinuses while you are preparing them, so be warned, you may have to take a break, or periodically turn your head away from the peppers. Place prepared peppers on a cookie sheet.
2. Mix softened cream cheese, shredded cheese, and seasoning blend.
3. Don’t remove those gloves just yet. Place cheese in peppers and mound up a little.
4. Measure and put into three separate bowls the milk, flour, and bread crumbs. You can remove the gloves now. Dip each pepper in the milk, then the flour, then milk again, then breadcrumb, then milk, then breadcrumb. Repeat the milk and bread crumb if needed to totally cover up the pepper and cheese.
5. Place each breaded popper back on the baking sheet and preheat the oil to 375 degrees. Fry each pepper for 2-3 minutes, until browned, but not so much that the cheese starts to escape.
6. Serve with sour cream, salsa, guacamole and enjoy!

I made these last week. Very good recipe!!
the double breading is very important, although I found that flour-milk-breadcrumbs-flour-milk-breadcrumbs worked the best for me.
Haha I think I too carefully removed the ribs from the jalapenos because they were very mild tasting, almost bell peperish. A little hot sauce fixed them up though.
I will make them this summer with my patio grown pepers which are hot even without their ribs.
And I remembered a tip from cooksillustrated or something that said to freeze the stuffed and unbreaded peppers for half an hour so the breading can get fried crispier before the cheese melted.

Thanks for sharing this recipe! I’m trying to come up with a 5-6 course meal for my husband on Valentines Day, and I believe I will include these. They look awesome! Great picture btw too!

I’d also like to add an “Ahem!” to the glove idea! I didn’t use gloves for the first time last week, and I felt burning sensations anytime I touched anything, for almost a week! lol – worth it to get some gloves!
