Once you try these, it will be hard to go back to the Southern style fried green tomatoes.
Peel skin from tomatoes. Remove stem portion. Slice vertically into four slices each tomato.
In a shallow bowl, beat eggs. In another shallow bowl, combine bread crumbs and Parmesan cheese.
Heat oil in a frying pan or deep fryer.
Dip each tomato slice in egg and then in bread crumbs. When in bread crumbs, press crumbs onto the tomato slice.
Fry in oil until just turning light brown; turn and fry the other side.
Remove from oil and place on a rack to drain.
Best served while warm.
