Description

A rare treat … but so delicious.

Ingredients

  • 4 pieces Zucchini Blossoms
  • ½ pounds, ⅞ ounces, weight Greek Feta Cheese
  • 2 Tablespoons Cream Cheese
  • 1 Tablespoon Finely Chopped Dill
  • Olive Oil
  • 4 slices Any Bread You Prefer

Preparation

Take the zucchini blossoms and carefully open them at the top. Try not to rip them too much. Check if there are any little bugs or dirt inside and if so, remove. Try not to wash them because it will take away some of the delicious flavor.

Crumble the feta cheese into a bowl and add the cream cheese. Add the dill and stir until everything is well combined.

Now carefully fill the cheese mix into your zucchini blossoms and put them on a lined baking tray. After you have filled all your blossoms, you can sprinkle the rest of the cheese mix over the zucchini blossoms on the tray. Sprinkle with a little olive oil.

Put into the oven at 400 F (200 C) at the top shelf with the grill on, for about 10 minutes. Watch closely so they don‘t burn.

If you prefer, you can toast the bread slices, or just leave them as they are.

Put one zucchini blossom on each slice of bread and serve immediately.

I saw zucchini blossoms at the market a few days before finding this recipe and decided to try them the next time I went. They were so delicious!!!!! I can’t wait to find them again next summer!
