Easy, tasty bruschetta!
Cut baguette on the diagonal into 1 inch slices (you should shoot for 12 slices). In a large skillet on medium high heat, dry the toast for 1-2 minutes on each side (I used a pan with a grill pattern). When finished, rub one side of each piece of toast with the cut garlic clove and set aside.
In a bowl combine cherry tomatoes, basil, red onion and olive oil. Gently toss to mix.
On a large plate, arrange toasts with garlic side up. Lay a slice of mozzarella on each toast and top with a spoon of the tomato mixture. Sprinkle with salt and pepper.
