These pesto shrimp skewers are made on the grill and taste amazing! Serve them as an appetizer or a light meal. They are perfect for a party.
I recommend that you squeeze fresh lime juice for serving. The lime wedges are just for garnishing and sometimes have bitter taste after grilling.
In a large bowl, combine pesto, salt, pepper and lime juice. Add shrimp, cover and marinate for 30 minutes.
Soak wooden skewers in cold water for 15 minutes. Thread lime, shrimp and tomato onto skewers.
Preheat a gas grill to medium low heat. Glean grates and lightly grease them. Cook skewers for 3–4 minutes per side, turning once, until shrimp is no longer pink. Serve.
