Description

Tomatillos are unique little gems that have a buttery, tart flavor. This beautiful green ‘other’ salsa is perfect for chips, quesadillas, nachos or with a spoon right out of the jar! It’s going to be a favorite around your house and with your friends. Make extra. They’ll want to take home a jar with them like my girlfriends did last night!

Ingredients

  • 2 pounds Tomatillos
  • 1 bunch Cilantro
  • 4 cloves Garlic
  • 1 whole Jalapeno Pepper
  • 2 whole Limes
  • 1 teaspoon Salt
  • ½ teaspoons Fresh Cracked Black Pepper

Preparation

Remove husks from tomatillos and wash tomatillos in warm water to remove any bits of dirt. Remove stem area at top, like you would a tomato. Cut in half and place in food processor bowl. Cut jalapeno pepper in half lengthwise. Remove seeds and ribs from only ONE of the halves; keeping in the other half. (Note: if you really like your salsa hot and spicy, then keep the seeds and ribs in both halves.) Place in processor. Peel garlic cloves and add to processor. Trim the end of the cilantro bunch; cut bunch in half and add. Juice the two limes into the processor bowl. Add salt and pepper. Pulse mixture about 5 times to get things moving and chopped up. Continue another 5 times or so until salsa is of thick consistency. Enjoy! Refrigerate any leftovers (HA!) in an air-tight container. Will keep for a week in the fridge!

Edna called I came running. This salsa verde is so mouth wateringly good I’m drooling on the key board. I’ll clean up later…

This was a big hit, so easy to make and versatile. We used on beef tacos, pulled pork, cheese quesadillas and straight out of the bowl on chips. Next time I am going to roast the tomatillos first and see how that turns out.

Great! I added a bit of cayenne too, because we like it hot around here. Yummy! I am wondering how well it will freeze? OH. I also roasted the tomatillos first for a toasty flavor.

This salsa is amazing! Made me want to plant 50 tomatillo plants next year. I just wish it lasted longer and you could can it so you could have it year round. Love the lime flavor in it.

WOW! This is delicious salsa! I found a recipe for tomatillo sauce in a cookbook that called for mint, basil, and other sorts of crazy things in it. I found your recipe and decided to use what you had AND try basil. It was delightful!! My husband liked this salsa MORE than the restaurant salsa I’d made from Ree’s recipe. Did I not make her’s spicy enough? No worries, the next time I made your salsa, I also included an onion. Yum! Thanks for such a great recipe! I’m onto my third session of this salsa which from now on will be doubled.
