A simple new twist on potato chips.
Begin by slicing your cleaned potatoes roughly 1/8 to 1/4 inch thick, keeping the skin on. Soak in cold water for about 30 minutes to remove some of the starch. Drain, and pat dry.
Preheat your oven to 400 degrees.
Melt the butter and curry powder, and mix well. Pour over the potatoes, and mix well. Layer on a baking sheet, in a single layer, and bake for 20 minutes. Flip each potato over, and baked another 10 minutes, being careful not to burn them.
Remove them from the oven and sprinkle with salt.

These look yummy! I wonder what it would taste like if you used sweet potatoes!
