Curried chicken dip has just a few ingredients but huge flavor. Get on this.
Preheat a skillet to medium-high heat with the olive oil. Once oil is hot add the chicken, and sprinkle with salt and some of the curry powder. Flip the chicken after 5 minutes, and finish cooking through (depending on the thickness of the chicken it should take 5-6 minutes per side; but to be sure, the juices should run clear and it should not be pink inside). Remove pan from heat. Let chicken cool, then shred with two forks.
In a bowl, add the shredded chicken, cream cheese, garlic, scallion, and remaining curry powder. Stir using a fork to combine. Taste, and add heavy cream 1 tablespoon at a time to thin if needed. Add salt to your preference.
Serve as desired. Enjoy!
