Description

Black beans, white shoepeg corn, and fresh veggies with a yummy homemade lime dressing. A family favorite for parties and camping trips.

Ingredients

  • 1 can Black Beans (15 Oz. Can), Drained
  • 1 can (11 Oz. Size) White Shoepeg Corn, Drained
  • ¼ cups Cilantro, Chopped Fine
  • ¼ cups Red Onion, Chopped Fine
  • ¼ cups Sweet Peppers, Chopped Fine
  • 1  Small Jalapeno, Seeded And Minced
  • ½  Avocado, Peeled, Pitted, And Diced
  • 2 Tablespoons Canola Oil
  • 1 Tablespoon White Vinegar
  • 1 Tablespoon Fresh Lime Juice
  • 1 clove Garlic, Minced
  • ½ teaspoons Sugar
  • ½ teaspoons Salt

Preparation

Add beans, corn and other veggies (add the avocado right before serving) into a big bowl. Add the oil, vinegar, lime juice, garlic, salt and pepper and toss gently to mix. Serve with tortilla chips for dipping.

* I use mini peppers in red, orange, and yellow.
** Leave some or all of the seeds if you want it hot.

This is easily adaptable if you want to make substitutions, add more or less of something, or leave something out altogether.
