A delicious and easy-to-make chip dip! My roommates and I made this for a Christmas party last year and it was the first appetizer finished that night. Similar to a black bean and corn salsa, the addition of avocado and zesty Italian dressing really dresses it up. (Cook time is really chill time.)
1. Toss everything together except for avocado. Add in more salad dressing if the mixture seems dry.
2. Add in avocado carefully so as not to break up the pieces.
3. Cover with layer of plastic wrap pressed down directly on top of the mixture. A tight seal will ensure that the avocado doesn’t brown before being served.
4. Chill for at least 2 hours. Overnight is best, as the flavors will meld together.
Serve with corn chips or in a cold wrap. Or, try heating and serving over chicken or in tacos.
