Nothing beats fresh Minnesota sweet corn in August – this fresh salsa is a perfect way to serve corn at your party, without having to eat it off the cob. It is simple and amazing.
Boil corn and let cool. When cool, cut off cob.
Dice remaining veggies.
Mix together all ingredients – except sour cream and chips.
Cover and chill for 3 hours, or till serving.
Serve with sour cream and tortilla chips.
