Description

This a fresh, delicious salsa that will not disappoint. Lots of fresh ingredients add tons of flavor! It’s also great as a salad so feel free to eat and not feel guilty because it’s super healthy for you!

Ingredients

  • 1 can (15 Oz. Can) Whole Kernel Corn, Drained
  • 1 can (15 Oz. Can) Black Beans, Drained And Rinsed
  • 2 whole Plum Tomatoes, Seeded And Chopped
  • ½ whole Medium Red Onion, Chopped
  • ¼ cups Minced Fresh Cilantro
  • 1 whole Jalapeno Pepper, Seeded And Chopped
  • ¼ cups Fresh Lime Juice
  • ¼ teaspoons Salt

Preparation

Mix all ingredients; cover and chill until ready to serve. Great served as a salad or with tortilla chips for dipping.

Note: I left out the tomatoes in my salad/salsa. It’s all in how you like it!

I’m thinking of making this next weekend…do you add the entire can of corn (liquid and all) or do you drain it first.

I wish we had a Trader Joe’s, but we don’t. Their ingredients are wonderful, I’ve heard. If we ever get one I’ll make sure and try their roasted corn in this recipe, per your suggestion. :)

I do something very similar, except I use frozen Roasted Corn from Trader Joe’s and canned diced tomatoes. I love it room temp over warm brown rice or quinoa! I also zest the lime into it, because I really love that lime flavor.
