This ain’t your plain ol’ salsa recipe! This one’s got flair that the others don’t. Flair in the form of Fritos. Don’t ask why. Just dip in and give it a try.
You’ll be glad you did.
Mix corn, beans, oil, vinegar and sugar together in large mixing bowl. Stir to combine. Refrigerate for 24-48 hours.
Drain remaining liquid and toss in feta. Move salsa into a serving dish and garnish with green onion.
Serve with Fritos. It’s what makes the dish.
(The servings are approximate. It’s the perfect size for potlucks, football games, graduations, backyard bbq’s, or, if you’re like me, a night on the couch watching movies. But forget I said that, and bring it to a party already!)
